SCIENTIFIC NAME: Pangasius Bocourti ("Basa" Fish); Pangasius Hypophthalmus ("Tra" Fish).

TRADE NAME(S): Basa Catfish, Pacific Dory, River Cobbler, Cream Dory

FARMING

Floating-cages and farm-pond in theMekongRiver, An Giang province area,Vietnam.

Breeding Duration: 5 - 8 months

Weight size Range (live whole-fish) : 0.9 kg - 1.1 kg - 1.2 kg - 1.5kg

Harvesting Crop:

Blooming crop with two major crops : June - July and September - October.

Normal crop with two major crops : March - April - May and November - December.

Whole Fish to H&G : 60% - 65%

SPECIAL CHARACTERISTICS OF THE PANGASIUS FILLETS

Fillets with boneless and skinless, belly flap-off.

Fillets without residues of skins, fat or superficial blood spots.

Fillets with uniform color, frozen fresh flesh look like flaked.

Fillets with white color, lean meat, firm tender texture and with special characteristic taste of mild buttery flavor of the PANGASIUS FISH.

Fillets after cooking without odour of muddy. Not break aftercooking, looksponge-like.

Fillets temperature at delivery: -180C.
